After spending a lot of time in the South Pacific as a young man, Don (originally named\u00a0Ernest Raymond Beaumont Gantt) had the idea to start a themed restaurant in Hollywood &#8211; pairing island-influenced cocktails with food that had its roots in Polynesian, Cantonese, and Hawaiian cuisine.
